Last Night's Dinner - Mexican Pizza

By the time Tim got home last night, he was exhausted from a full weekend of visiting and partying, and I was exhausted from a full weekend of packing and cleaning (and shopping!). I knew we were going to have to go out to get groceries, but I wanted something simple to make for dinner. The grocery store in Chesley used to have these premade Mexican pizzas that you could take home and put in the oven. I loved them so much - I love pizza in general and this is just a fresh way to do it.



Mexican Pizza
Serves two with leftovers

Prebaked pizza crust (we found circular flatbreads in the deli section of Metro that worked perfectly)
Salsa
1 lb ground beef
1 tbsp Tex-Mex seasoning
Small container sour cream
2-3 cups shredded cheddar cheese
1 small tomato, chopped
1-2 cups shredded romaine lettuce

Preheat the oven to 400 degrees F. Brown the ground beef in a frying pan over medium heat. When it's cooked, add the Tex-Mex seasoning and stir to mix. 

Meanwhile, put a thin layer of salsa on the pizza crust. Top that with the cooked ground beef. Now for the most frustrating step - adding the sour cream. I find it's best to put evenly spaced spoonfuls of sour cream around the pizza on top of the ground beef and then kind of push it into the ground beef and around until you more of less have even coverage. Sprinkle with the chopped tomato, and then cover with shredded cheese. Pop this into the oven for 5-10 minutes, or until the cheese is melted. If you like, you can turn on the broiler for the last couple of minutes just to get it really melted and bubbly.

Take the pizza out of the oven and top with shredded lettuce. Cut into eight pieces and serve.
